03 — Method

  1. Take the monkfish out 15 minutes ahead and pat dry so it browns.
  2. Season generously just before cooking.
  3. Finely chop the 3 shallots. Remove the germ from the 4 garlic cloves and chop finely. Chop half the parsley, keeping the rest to garnish.
  4. Heat 2 tbsp of olive oil and 30 g (1 oz) of butter in the large sauté pan over high heat and sear the monkfish for just 3 minutes per side.
  5. Set aside. Soften the shallots in the pan for 4 minutes. Add the garlic and tomato paste and cook 2 minutes.
  6. Add the cognac and flambé for 30 seconds. Add the white wine and reduce for 3 minutes. Add the crushed tomatoes, saffron and paprika.
  7. Add the hot fish stock, bring to a simmer and reduce for 10 minutes until thickened.
  8. Stir in the crème fraîche and cook 3 minutes. Return the monkfish with the peeled shrimp and cook 5 minutes. Sprinkle with cayenne and parsley and serve with rice pilaf.
