03 — Method

  1. Make a classic pastry cream with the milk, yolks, sugar and cornstarch, cooking 2 minutes while whisking.
  2. Off the heat, stir in the chopped candied fruit and the rum, press plastic wrap onto the surface and chill 1 hour.
  3. Cut the brioche into 1.5 cm (⅝ in) slices and lay them out to soak lightly.
  4. Beat the whites to stiff peaks in the stand mixer, then rain in the sugar for a smooth, glossy French meringue.
  5. Spread each slice generously with the candied fruit cream and stack them to re-form the loaf.
  6. Cover the whole loaf with meringue using a spatula, smoothing the sides and pulling up peaks on top.
  7. Sprinkle with sliced almonds and powdered sugar and bake 6 minutes at 220°C (430°F) to brown the meringue without drying it out.
