03 — Method

  1. Preheat the oven to 200°C (400°F) convection. Wash the zucchini and peel in stripes. Cut into thin 2 mm (1/16 in) ribbons on a mandoline.
  2. Peel the 2 carrots and cut into ribbons the same way. Blanch 2 minutes in boiling salted water, then plunge into ice water.
  3. Slice the lemon into thin 3 mm (⅛ in) rounds. Fold 4 large sheets of parchment in half to make the packets.
  4. Toss the zucchini and carrot ribbons with 2 tbsp olive oil, salt and pepper. Divide among the parchment sheets, on one half of each.
  5. Pat the fillets dry and season both sides with fleur de sel and pepper. Lay them skin side up on the vegetables.
  6. Top each fillet with 2 lemon slices, 1 thyme sprig and 1 wild fennel sprig. Drizzle with 1 tsp extra-virgin olive oil.
  7. Fold the parchment over into a half-moon and crimp the edges tightly to seal. Make sure there are no gaps for steam to escape.
  8. Put the 4 packets on the baking sheet and bake 12 minutes at 200°C (400°F). The paper should puff and brown slightly. Serve the packets closed so everyone opens their own at the table.
