03 — Method

  1. Rinse the sushi rice until the water runs clear. Cook in 360 ml (1½ cups) of salted water according to the package (about 18 minutes, covered), then season with the rice vinegar.
  2. In a medium bowl, mix the soy sauce, toasted sesame oil, grated ginger and wasabi.
  3. On a well-chilled board, cut the salmon into even 1.5 cm (½ in) cubes with a very sharp knife. Work quickly to keep it cold.
  4. Toss gently in the marinade and refrigerate for no more than 15 minutes.
  5. Meanwhile, boil the edamame in salted water for 5 minutes, cool in ice water and shell them.
  6. Peel and slice the avocado and cut the mango into 1 cm (⅜ in) cubes. Peel the cucumber in stripes and slice into thin half-moons.
  7. Pack the warm rice into the bottom of 2 bowls. Arrange the salmon in the center with the vegetables and fruit around it.
  8. Sprinkle generously with sesame seeds, drizzle with the leftover marinade and serve immediately.
