03 — Method

  1. Preheat the oven to 200 °C (400 °F) fan for 15 minutes. Line the 26 cm (10 in) tart pan with parchment and the puff pastry, and prick the bottom with a fork.Making it from scratch? See the shortcrust pastry — ≈ 15 min
  2. Wash and dry the 6 tomatoes and slice 5 mm (¼ in) thick. Lay on paper towels and salt lightly to draw out the water for 15 minutes.
  3. Brush the 3 tbsp of Dijon mustard over the crust in a thin, even layer right to the edges.
  4. Sprinkle half the Gruyère over the mustard — it keeps the crust from going soggy.
  5. Pat the tomatoes dry and arrange them in overlapping circles from the edge to the center.
  6. Thinly slice the 2 garlic cloves (germ removed) and scatter over. Season and sprinkle with the sugar (to balance the acidity) and herbes de Provence.
  7. Drizzle with olive oil and sprinkle with the rest of the Gruyère. Bake for 35 minutes at 200 °C (400 °F) until the tomatoes are soft and the crust golden and crisp.
  8. Let rest for 5 minutes before unmolding. Serve warm topped with fresh basil, with an arugula salad.
