03 — Method

  1. In the large bowl, mix 3 chopped garlic cloves, 1 tbsp of grated ginger, 2 tbsp of soy sauce, 1 tbsp of sesame oil, 1 tbsp of sugar and pepper.
  2. Toss the beef in the marinade and refrigerate for 30 minutes.
  3. For the nước chấm dressing, mix 5 tbsp of fish sauce, 3 tbsp of lime juice, 2 tbsp of sugar, the 2 remaining garlic cloves (chopped), the sliced chilies and 100 ml (½ cup) of water until dissolved.
  4. Prep the vegetables: julienne the 200 g (7 oz) of carrots on a mandoline, julienne the cucumber (seeds removed), shred the lettuce and pick the herbs.
  5. Cook the 400 g (14 oz) of vermicelli according to the package (usually 3 minutes in boiling salted water). Rinse under cold water and drain well.
  6. Heat 3 tbsp of peanut oil in the large wok over VERY high heat until just smoking and stir-fry the beef for 3 minutes until browned.
  7. Fry the 8 spring rolls in an oiled skillet for 5 minutes per side until crisp. Drain and halve.
  8. Build 4 large bowls: lettuce, noodles, carrot and cucumber, bean sprouts, herbs, hot beef and 2 spring-roll halves each. Sprinkle with peanuts and serve the dressing on the side.
