03 — Method

  1. Slice the beef very thinly, 3 mm (⅛ in), against the grain — ABSOLUTELY essential for tender stir-fried beef.
  2. In the large bowl, mix 3 tbsp of soy sauce, 2 tbsp of mirin, 1 tbsp of sesame oil, 1 tbsp of cornstarch and 1 tsp of sugar.
  3. Toss the beef in the marinade and refrigerate for 30 minutes.
  4. Cut the 600 g (21 oz) of broccoli into 3 cm (1 in) florets; peel and slice the tender stem too.
  5. Blanch the broccoli in a large pot of boiling salted water for 2 minutes, then plunge into ice water. Drain well.
  6. Remove the germ from the 5 garlic cloves and chop finely. Finely grate the 3 cm (1 in) piece of peeled ginger. Slice the 5 green onions, keeping the tops for garnish.
  7. Heat 2 tbsp of peanut oil in the large wok over VERY high heat until just smoking and stir-fry the beef for 3 minutes until browned. Set aside.
  8. Add 1 tbsp of oil and stir-fry the garlic, ginger and onion whites for 30 seconds. Add the broccoli, oyster sauce and 2 tbsp of soy sauce. Return the beef for 1 minute. Top with sesame seeds and green onions.
