03 — Method

  1. Peel the 500 g (18 oz) of potatoes and cut into even 2 cm (¾ in) cubes.
  2. Thinly slice the 2 onions. Remove the germ from the 5 garlic cloves and chop them. Finely grate the 3 cm (1 in) piece of peeled ginger.
  3. Wash the 400 g (14 oz) of spinach in several changes of water — ABSOLUTELY essential, it holds a lot of grit.
  4. Heat the 3 tbsp of oil in the large sauté pan over medium heat and fry the mustard seeds for 30 seconds until they pop (the Indian tempering technique).
  5. Add the onions and cook 8 minutes until golden. Add the garlic and ginger and cook 1 minute.
  6. Stir in all the ground spices (turmeric, cumin, coriander, garam masala, chili) and toast for 1 minute, stirring constantly.
  7. Add the crushed tomatoes and 200 ml (¾ cup) of water and bring to a simmer. Add the potatoes and cook covered over low heat for 20 minutes, stirring often, until tender.
  8. Stir in the drained chickpeas, spinach and coconut milk and cook 10 minutes until the spinach is soft. Season and serve with chopped cilantro and a squeeze of lime.
