03 — Method

  1. Preheat the oven to 200 °C (400 °F) fan. Take the fillets out 15 minutes ahead and pat dry on both sides.
  2. Score the skin 3 times on the diagonal, only 2 mm (1/16 in) deep, so the fillets don’t curl.
  3. Halve the 300 g (11 oz) of cherry tomatoes lengthwise. Remove the germ from the 6 garlic cloves and slice thinly. Cut the 2 lemons into 5 mm (¼ in) half-moons.
  4. Lay the fillets skin side up in the large parchment-lined baking dish and season generously.
  5. Scatter the tomatoes, garlic, lemon, thyme sprigs, Niçoise olives and capers around the fish.
  6. Crumble dried oregano over the top.
  7. Drizzle with the extra-virgin olive oil (80 ml / ⅓ cup), especially over the skin. Pour the white wine into the dish.
  8. Bake for 18 minutes at 200 °C (400 °F) fan until the skin is golden and the fish flakes easily. Sprinkle generously with fresh basil and parsley.
