03 — Method

  1. Take the pork out of the fridge 1 hour ahead so it cooks evenly.
  2. Mix the 4 tbsp of whole-grain mustard with the 2 tbsp of Dijon.
  3. Brush the mustard all over the roast, season generously and tie with kitchen twine.
  4. Finely chop the 3 shallots. Remove the germ from the 4 garlic cloves and crush them. Chop half the parsley, keeping the rest to garnish.
  5. Heat 3 tbsp of olive oil and 30 g (1 oz) of butter in the large cast-iron Dutch oven over high heat and brown the roast on all sides, 8 minutes.
  6. Set aside. Soften the shallots in the pot for 4 minutes, then add the garlic and thyme and cook 1 minute.
  7. Deglaze with the white wine, scraping up the browned bits, and reduce for 3 minutes. Return the roast with hot chicken stock halfway up.
  8. Cover and simmer gently for 1 hour, turning halfway. Lift out the roast, stir the crème fraîche into the sauce and reduce for 5 minutes. Slice and spoon over plenty of sauce.
