03 — Method

  1. Soak the 40 g (1½ oz) of morels in 200 ml (¾ cup) of warm water for 30 minutes.
  2. Take the 4 chops out of the fridge 30 minutes ahead so they cook evenly.
  3. Lift out the morels and rinse well to remove grit. Strain the soaking water through a fine sieve or cheesecloth and keep it.
  4. Season both sides generously just before cooking.
  5. Heat 2 tbsp of olive oil and 30 g (1 oz) of butter in the large cast-iron skillet over high heat until foaming and sear the chops for 4 minutes per side, to 60 °C (140 °F) in the center.
  6. Keep warm under foil. In the same pan, soften the 3 finely chopped shallots for 3 minutes without browning.
  7. Add the morels and cook 5 minutes over medium heat. Deglaze with the wine and the strained soaking water and reduce for 5 minutes.
  8. Stir in the crème fraîche and chicken stock and reduce over low heat for 8 minutes until it coats a spoon. Return the chops for 2 minutes. Serve with plenty of sauce and chopped parsley.
