03 — Method

  1. Preheat the oven to 250 °C (475 °F) fan with the baking sheet inside, for a crisp base.
  2. Drain the 200 g (1⅓ cups) pineapple very well and pat dry on paper towels: the juice would make the pizza soggy.
  3. Roll the pizza dough into a 30 cm (12 in) round on a floured surface, forming a slightly thicker rim.
  4. Spread the 200 g (¾ cup + 1 tbsp) tomato purée over the dough, leaving a 1 cm (½ in) border, sprinkle with dried oregano and add pepper.
  5. Cut the ham into strips and scatter with the pineapple, then the mozzarella pieces and grated cheddar.
  6. Drizzle with olive oil and bake on the hot sheet for 10 to 12 minutes at 250 °C (475 °F), until the pineapple is lightly caramelized and the edges golden.
