03 — Method

  1. Wash the 300 g (11 oz) of fresh spinach in plenty of water and spin dry so the batter isn’t too runny.
  2. Remove the germ from the 2 garlic cloves and crush them. Heat 1 tbsp of olive oil in the large skillet over medium heat and cook the garlic for 30 seconds. Add the spinach and cook 3 minutes.
  3. Once wilted, drain the spinach in a colander, pressing hard with the back of a spoon to squeeze out all the water.
  4. Blend the spinach with the whole milk until smooth — it turns the pancakes green.
  5. In the medium bowl, mix the flour with the baking powder, salt, pepper and pinch of nutmeg. Make a well, crack in the 3 eggs and whisk, gradually drawing in the flour.
  6. Whisk in the spinach milk until smooth and lump-free. Gently fold in the crumbled feta, grated Parmesan and chopped chives.
  7. Melt 30 g (1 oz) of unsalted butter in the large nonstick skillet over medium heat. When it foams, pour in half a ladle of batter per pancake to make 10 cm (4 in) rounds. Cook 2 minutes per side.
  8. Flip when bubbles appear on top and the underside is golden, then cook 2 more minutes. Serve right away with Greek yogurt and fresh herbs.
