03 — Method

  1. Press the tofu between paper towels under a weight for 30 minutes so it browns well.
  2. Peel the 300 g (11 oz) of potatoes, cut into 2 cm (¾ in) cubes and boil in salted water for 15 minutes until tender. Drain and let cool slightly.
  3. Trim the 200 g (7 oz) of green beans and blanch in the same water for 5 minutes, then cool in ice water. Shred the cabbage and blanch it for 2 minutes so it stays crisp.
  4. Peel the carrots, cut into 5 cm (2 in) sticks and blanch for 3 minutes. Slice the cucumber into thin 5 mm (¼ in) half-moons, skin on.
  5. Boil the 4 eggs for 9 minutes, cool in ice water, peel and halve lengthwise.
  6. Cut the tofu into 1.5 cm (½ in) cubes. Heat 3 tbsp of sunflower oil in the large skillet over medium-high heat and brown the tofu for 8 minutes, turning often.
  7. Make the peanut sauce: chop the garlic and grate the ginger. In the medium bowl, whisk the peanut butter, garlic, ginger, soy sauce, lime juice, palm sugar and sambal until smooth.
  8. Whisk in the coconut milk until pourable. Arrange the potatoes, green beans, cabbage, carrots, cucumber, bean sprouts, tofu and eggs on plates, spoon over the sauce and sprinkle with sesame.
