03 — Method

  1. Cook the soba noodles in a large pot of boiling salted water according to the package (usually 4 to 5 minutes). Rinse right away under cold water to stop the cooking and remove the starch.
  2. Drain the noodles well and toss with 1 tbsp of toasted sesame oil so they don’t stick together.
  3. Cut the broccoli into 3 cm (1 in) florets. Peel the 2 carrots and cut into fine julienne or 4 cm (1½ in) sticks. Seed the red bell pepper and cut into 1 cm (⅜ in) strips. Trim the snow peas.
  4. Wipe the shiitakes with a damp paper towel and slice them 5 mm (¼ in) thick. Thinly slice the 4 green onions, keeping the green tops for garnish. Slice the garlic and finely grate the fresh ginger.
  5. Heat the wok over very high heat until it just starts to smoke. Add 2 tbsp of sunflower oil and 1 tbsp of sesame oil, then the garlic and ginger for 30 seconds, stirring.
  6. Add the broccoli and carrots and stir-fry for 3 minutes. Add the bell pepper and shiitakes and cook 3 more minutes, stirring constantly.
  7. Add the snow peas and half the green onions and cook for 2 minutes so they stay crisp. Add the soy sauce, honey and 2 tbsp of water and toss well to glaze.
  8. Add the noodles and toss gently for 2 minutes to coat without breaking them. Serve right away topped with cilantro, sesame seeds, green onions and lime zest.
