03 — Method

  1. Pierce the pork roast all over with the tip of a paring knife, then slip a sliver of garlic into each cut to flavor the meat right through.
  2. Rub the roast with fleur de sel and freshly ground pepper, then let it rest for 30 minutes at room temperature so the seasoning sinks in.
  3. Melt the duck fat in the Dutch oven over medium heat, then brown the roast on all sides for 10 minutes until it has an even golden crust.
  4. Pour the hot chicken stock into the pot, add the thyme and bay leaf, then cover and simmer over very low heat for 2 hours, turning the roast halfway.
  5. Check for doneness by piercing the meat: the juices should run clear and the meat should pull apart easily. If not, cook 20 minutes more, covered.
  6. Take out the roast and let it rest for 10 minutes under foil, then reduce the cooking juices over high heat until syrupy.
  7. Cut the enchaud into thick 1.5 cm (½ in) slices, spoon the reduced juices over and serve hot with Sarlat-style potatoes — or cold the next day in its jelly.
