03 — Method
- Finely chop the chocolate so it melts evenly.
- Melt the chocolate with the cubed butter in a double boiler, stirring until smooth.
- Whisk the eggs with the sugar in the bowl for about 3 minutes until pale and fluffy.
- Gently whisk in the cooled chocolate mixture.
- Fold in the sifted flour and baking powder and the vanilla extract with a spatula until smooth.
- Pour into the buttered, parchment-lined pan and smooth the top with a spatula.
- Bake 25 minutes at 180°C (350°F) convection, then let cool slightly before unmolding onto a rack to cool completely.
