03 — Method

  1. Lift the mozzarella out of its brine and drain on paper towels for 10 minutes so the skewers aren't watery.
  2. Wash the 400 g (2⅔ cups) red and yellow cherry tomatoes under cold water and pat dry.
  3. Pick the tender leaves from the large bunch of basil.
  4. Drain and pit the 100 g (⅔ cup) Kalamata olives. Cut the prosciutto (optional) into thin strips.
  5. Make the dressing in the small bowl: extra-virgin olive oil, balsamic glaze, dried oregano, salt and pepper. Whisk hard to emulsify.
  6. Assemble the 24 skewers, threading on each: 1 red cherry tomato, 1 basil leaf, 1 mozzarella ball, 1 olive, 1 yellow cherry tomato, 1 basil leaf.
  7. For the prosciutto version (optional): tuck a folded piece of prosciutto between the ingredients.
  8. Arrange the 24 skewers on the large platter. Drizzle generously with the balsamic dressing and scatter with the remaining basil. Serve RIGHT AWAY at room temperature.
