03 — Method

  1. Cook the 500 g (1 lb) pasta in a large pot of boiling salted water (10 g salt per liter, about 2 tsp per quart) until AL DENTE, per the package. Al dente matters: the pasta keeps softening in the salad.
  2. Drain the pasta and rinse IMMEDIATELY under cold water to stop the cooking.
  3. Tip the cooled pasta into the large bowl and toss with 3 tbsp extra-virgin olive oil so it doesn't stick.
  4. Wash the 300 g (2 cups) cherry tomatoes and halve them lengthwise.
  5. Lift the mozzarella out of its brine and drain on paper towels for 10 minutes. Cut into 2 cm (¾ in) cubes.
  6. Drain and pit the 100 g (⅔ cup) Kalamata olives. Toast the 100 g (⅔ cup) pine nuts in a small dry skillet for 3 minutes, stirring constantly, until golden and fragrant.
  7. Wash the 150 g (5 oz) arugula in cold water and spin completely dry. Pick the leaves from the large bunch of basil.
  8. Stir the pesto into the cooled pasta to coat. Add the cherry tomatoes, mozzarella, olives, arugula, basil and pine nuts. Toss. Top generously with parmesan shavings and a drizzle of balsamic vinegar.
