03 — Method

  1. Prep the 2 ripe mangoes: cut down each side of the pit to get the 2 cheeks. Score the flesh in a grid without cutting the skin, push the skin inside out and scoop the cubes into the blender.
  2. Take the 2 bananas out of the freezer 5 minutes ahead. Frozen bananas are ABSOLUTELY essential for a thick, icy texture without adding ice.
  3. Prep the toppings: peel the remaining mango and cut into 1 cm (⅜ in) cubes. Wash and gently dry the 100 g (3½ oz) of berries. Pick the 10 mint leaves.
  4. Put all the smoothie ingredients in a powerful blender: mango, sliced frozen bananas, coconut milk, Greek yogurt, runny acacia honey, lime juice and a pinch of cinnamon. Blend on high for 2 minutes.
  5. It should be VERY thick — much thicker than a regular smoothie, so you can eat it with a spoon. Too thick? Add a little coconut milk. Too thin? Add more frozen banana.
  6. Pour right away into 4 large bowls, filling them ¾ full to leave room for toppings. Work QUICKLY — the icy texture fades fast.
  7. Arrange the toppings in rows on each bowl: mango cubes, whole berries, crunchy granola, shredded coconut and chia seeds.
  8. Finish each bowl with mint leaves and serve IMMEDIATELY, while still icy.
