03 — Method

  1. Lightly crush the cardamom pods with a pestle or the flat of a knife to release the fragrant seeds.
  2. Peel the ginger and slice it thinly so it gives the milk its spicy kick.
  3. Pour the unsweetened almond milk into a small saucepan. Add all the spices: cinnamon, cardamom, cloves, ginger.
  4. Heat over low heat for 5 minutes until it just simmers (don’t boil it — almond milk can split).
  5. Take off the heat and add the 2 black tea bags. Cover and let steep for 5 minutes.
  6. Remove the tea bags, pressing them gently. Add the maple syrup and whisk to dissolve.
  7. Strain the chai latte through a fine strainer into 2 cups to catch the whole spices.
  8. Dust each cup with a pinch of freshly grated nutmeg. Serve right away, piping hot and cozy.
