French Caribbean spiced blood sausage

1 L (4¼ cups)fresh pig's blood
500 g (18 oz)day-old bread, crusts removed
500 ml (2 cups)milk
300 g (11 oz)onions
1bunch cives (Caribbean scallions)
6 clovesgarlic
1Scotch bonnet chili
2 tbspfresh thyme
1 tbspfour-spice blend (quatre-épices)- 2m / 6½ ft cleaned hog casings

- 500 ml (2 cups) milk
- 300 g (11 oz) onions
- 1 bunch cives (Caribbean scallions)
- 6 cloves garlic
- 1 Scotch bonnet chili
- 2 tbsp fresh thyme
- 1 tbsp four-spice blend (quatre-épices)
- 2 m / 6½ ft cleaned hog casings
- Salt pepper, parsley
Quantities scaled for — some (egg, lemon, garlic…) are rounded to what’s practical.

03 — Method
- Soak the bread in hot milk and crumble it.
- Very finely chop the onions, scallions, garlic, chili and parsley.
- Mix the soaked bread, chopped aromatics, spices, salt and pepper.
- Pour in the blood in a thin stream, stirring constantly until smooth.
- Test the seasoning by cooking a spoonful in the microwave.
- Fill the casings loosely using a funnel.
- Tie the ends and twist into links.
- Poach for 25 minutes in a large pot of water at 80°C (175°F).
- Drain, let cool, then reheat in the oven or a skillet before serving.
